Notes A well known high quality Restaurant Operator is looking to establish a new team and venture in a boutique Hotel in South Wales.  The Hotel is small with less than 20 rooms all individually designed to create an exquisite retreat for the London leisure market. Conveniently situated near to the M4 the property is not a million miles from the hustle and bustle of London. Equally the picturesque country side and history of the region pulls from all over the globe They are looking for :-
*Maitre d' / Restaurant Manager
*Head Chef
*Sous Chef

Our client is looking for talent not status or arrogance. The Group has a wealth of experience and knowledge within and will be able to, if required, mentor individuals to deliver outstanding results. They are searching for skilled individuals with well managed careers who can be unusually creative yet sensible and organized to deliver the financial elements required for the success of the business
 The Brasserie will seat 60 to 100 on a Saturday or Sunday lunch and must be classical, simple fine food and service.  The Hotel has a kitchen garden which will supply some of the produce on the menu. The brasserie is open plan and adaptable for private dining. The Group Executive Chef has a reputation for working with local ingredients and suppliers to deliver a unique dish to the customer. The style of the group is friendly, high standards and relaxed but always professional. To fit in you will need to be a team player across the group, remain hands on to meet customer expectations and dig deep when necessary. You will have developed to your current position by listening to others in the team, being polite and respectful and working hard to continually improve in all that you do. Fine dining is your bag however you can dress it up or down to suit the service / customer.
